Eggs, Eggs and More Eggs

Since spring has really kicked in we have been getting between 5-6 eggs a day. Well now we have been getting between 8-9 a day and the other day we got a dozen in one day!! We now have 6 dozen eggs in the fridge and that's after I gave my mom and the feed mill owner 2 dozen each. This week we are going to start eating more egg incorporated dishes.
This past weekend I made breakfast burritos

and egg salad

I will also make a breakfast bake casserole and some type of strata this workweek and then on the weekend we will eat eggs for breakfast both days. We might make a small dent in the extra eggs but we'll keep getting more each day . We have thought about selling them but have't taken that step yet since we want to make sure we can steadily provide eggs to people who want and except them every week. What do you do when you have extra eggs? Do you cook or bake with them? Give them away or sell them?

  1. I sell them to the neighbors. And they're very understanding if I don't have their usual quantity on hand. When I'm really overrun, I make a dinner with a 6 egg quiche and popovers (another 4 eggs). You can freeze them too, to use over the winter when production is low.

  4. I sell my eggs, cook alot too!!! When you freeze the eggs you have to scramble them first. 1/4cup =1 egg. I have about 12 doz eggs in the fridge now(50 Chickens) I saw canned eggs at the farm market. Some were pickeled with beets and I saw bufallo flavor and mustard. Not sure how they taste canned but I love beets so I am looking up that recipe today and I will try it.
    Tonight I'm making potato soup and putting hardboiled eggs in that.

  6. You can also dehydrate your eggs. We have 10 chickens and we get between 10-12 eggs a day, and I just dehydrated 30 eggs, and have about 40 more in the refrigerator still!! Freezing does work, but then you can't cook with them (cakes, things like that) since they are precooked. But if you dehydrate, you can reconstitute and cook with it. We've wanted to sell ours too, but am worried about the whole "what if their bad" issue!

  8. you can crack them into large ice cube trays and freeze them. Then when they are froze you pop them out and put them in a freezer bag. When your egg production slows down in the winter months you still have plenty of eggs...one at at time, as needed.

  9. I had been getting over 30 eggs a day, but now I let some hens set - they were getting broody anyway. I still get 20-24 a day anyway. I give away eggs (family) and sell eggs at our farm and flea market. We also always have a dozen or so boiled in the refrig - really handy for salads, light snack, lunches. I will have to try the freezing. I did it before, but didn't scramble. Thanks for joining the Barn Hop. Blessings from Wisconsin.
